1. In a large skillet over medium heat, sauté leeks in oil. Add chili powder, tomatoes, parsley, and water, and bring to a boil.

1 TB. white wine vinegar

1¼ cups water

3 TB. dried cranberries, soaked in hot water and drained

¼ tsp. salt

¼ tsp. freshly ground black pepper
